  • 12 ounces (340g) pasta of your choice

Directions

  1. In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the ground beef and cook, breaking it up with a wooden spoon, until browned and cooked through. Remove the beef from the skillet and set it aside.
  2. In the same skillet, add the chopped onion, carrots, celery, and minced garlic. Sauté until the vegetables have softened, about 5 minutes.
  3. Return the cooked ground beef to the skillet. Stir in the crushed tomatoes, red wine (if using), beef or vegetable broth, tomato paste, dried oregano, dried basil, and bay leaf. Season with salt and black pepper to taste.
  4. Reduce the heat to low and let the sauce simmer uncovered for at least 1 hour, stirring occasionally to prevent sticking. The longer it simmers, the richer the flavors will become.
  5. In the meantime, cook the pasta according to the package instructions until al dente. Drain the pasta and set it aside.
  6. Remove the bay leaf from the Bolognese sauce. Taste and adjust the seasoning if needed.
  7. To serve, ladle the Bolognese sauce over the cooked pasta. Garnish with grated Parmesan cheese and fresh basil leaves.
