  • 2 racks of pork ribs (about 4 pounds/1.8 kg)

Directions

  1. Preheat your grill to indirect heat, around 250°F (120°C).
  2. In a small bowl, combine the paprika, brown sugar, chili powder, garlic powder, onion powder, cayenne pepper, salt, and black pepper to make a spice rub.
  3. Prepare the ribs by removing the silver skin on the back of the racks. Pat the ribs dry with a paper towel.
