Ingredients

For the cookies:

  • 1 and 1/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon instant coffee granules
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

For the frosting and decoration:

  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tablespoon instant coffee granules dissolved in 1 tablespoon hot water
  • 24 chocolate kisses, unwrapped

Directions

  1. In a medium bowl, whisk together the flour, cocoa powder, instant coffee granules, baking powder, and salt until well combined. Set aside.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract to the butter-sugar mixture and beat until well incorporated.
  4. Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until a soft dough forms. Be careful not to overmix.
  5. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes to allow it to firm up.
  6. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Remove the chilled dough from the refrigerator and roll it into 1-inch balls. Place the balls onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 10-12 minutes, or until the cookies are set around the edges. They will still be slightly soft in the center.
  9. Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes. Then, transfer them to a wire rack to cool completely.
  10. While the cookies are cooling, prepare the frosting. In a mixing bowl, cream the softened butter until smooth and creamy. Gradually add the powdered sugar and beat until well combined.
  11. Dissolve the instant coffee granules in hot water, and then add the coffee mixture to the butter-sugar mixture. Beat until the frosting is smooth and fluffy.
  12. Once the cookies have cooled, frost each cookie with a generous dollop of the coffee frosting. Place a chocolate kiss in the center of each frosted cookie.
  13. Allow the frosting to set for about 15 minutes before serving or storing in an airtight container.
